Awesome, Easy Bread Recipe

5 Minute Bread

Small Loaf

3C plain flour

1/4 tspn yeast

1 tspn salt

1 & 1/2 C water



Large loaf

5C flour

1/2 tspn yeast

1 & 1/2 tspn salt

2 & 1/2 C water



  • Night before: mix the ingredients in a bowl to form a dough and leave overnight on the bench, covered
  • Next morning knead for about 1 minute until smooth (I used a spatula and some flour sprinkled around the bowl to bring it all together into a smooth ball. - no mess on me, no mess on the bench)
  • Turn the oven up to 260C or as hot as it will go and place a cast iron, or similar, casserole dish with lid in the oven to heat up
  • You can line the base with a piece of baking paper before you put it in the oven just to make sure the bread doesn't stick.
  • When the oven and the pot are hot, carefully remove the pot from the oven or slide out the oven shelf, remove the lid and place the dough in the centre of the pot
  • Using a pair of kitchen scissors, make 3 - 5 snips in the top of the dough, replace the lid and return the casserole dish to the oven. With the lid on, the dough will be in a moist, steamy environment and this will help it to rise.
  • Bake for 30 minutes
  • Take the lid off, turn the oven down to 200C
  • Cook for another 15 - 30 minutes until golden in colour and hollow sounding when you knock on the bread.
